Sambal Tahu: a Crunchy Tofu Recipe

To make sambal tahu, fry tofu cut into french fries size. Then chop and grind red and green chilies with spices, fry the paste briefly, and combine it with the fried tofu. Simple and delicious!
What is sambal tahu?
Sambal tahu is a delightful sambal that features tofu as its main ingredient. This Indonesian sambal combines the spicy, savory flavors of chili paste with the soft, airy texture of fried tofu.
It’s a fantastic addition to rice dishes, noodles, or even as a standalone snack. Let’s get started with this wonderful recipe!
Step 1: Collect the ingredients

- Mortar and pestle or food processor
Ingredients
- 200 g tofu
- 2 large chillies (red and green)
- 1 tsp white pepper
- 1 tsp palm sugar
- salt to taste

You’ll want to use a mortar and pestle or a food processor to grind the chilies, just be sure to add the dried spices to the mortar and pestle directly to help the grinding process.

Step 2: Chop and fry the tofu
Cut the tofu into french fries size pieces. Heat a generous amount of sunflower oil in a pan on medium-high heat and fry the tofu until it’s golden brown and crispy on the outside. You’ll want to (almost) deep-fry the tofu so it get’s a crispy jacket all the way around the surface.

Alternatively, use a deep-fryer or any other frying method to create the crispy tofu. Set aside on some kitchen paper to soak up excess oil.


Step 3: Chop and grind the chilies
Chop the washed red and green chilies finely. Grind them together with palm sugar, white pepper, and salt until you have a smooth paste.


Step 4: Fry sambal tahu
In the same pan, heat a small amount of oil over medium heat. Add the chili paste and fry it for a few minutes until it becomes fragrant. Turn off the heat and add the fried tofu, stir well and that’s it!




Step 5: Serve and conserve sambal tahu
This sambal is best served immediately as it might lose its crisp if you don’t. If needed, you can store it in an airtight container in the refrigerator for up to a few days, always be sure to check your food before eating it!
