Sambal Toge: The Great Bean Sprout Sambal

Welcome to another great sambal recipe! Sambal toge, or bean sprout sambal, is a refreshing, raw sambal that bursts with crisp and spicy flavors. I’ve been eating this sambal for quite some time, it’s really great addition to rice dishes or on sandwiches!

To make sambal toge, simply chop and grind some chilies and garlic. Combine with bean sprouts and some spices, mix well and that’s it!

What is sambal toge?

Sambal toge combines the crunchiness of bean sprouts with the heat of red chilies and aromatics like shallots and garlic. This uncooked sambal offers a raw, fresh taste that’s perfect as a side dish or a dip, delivering a burst of flavor in every bite. It’s highly used in Asian cuisine, specifically Indonesian or Malay. Careful when using raw bean sprouts, make sure to wash them properly to remove bacteria!

  • 80 g bean sprouts
  • 2 large red chilies
  • 2 shallots
  • 1 garlic cloves
  • 1 tsp terasi
  • 1 tsp palm sugar
  • salt to taste

What to consider when choosing the ingredients

  • Red Chilies: Pick fresh, ripe red chilies for optimal color and heat.

Step 2: Chop and grind the ingredients

Finely chop the red chilies, shallots, and garlic. Grind together with salt, terasi, and palm sugar using a mortar and pestle. The spices will act as a grinding paste to easily grind the ingredients. Add them after the first additional grind and notice the difference!

Next, you want to wash the bean sprouts thoroughly to remove bacteria, dip them briefly in boiling if you want to be sure all bacteria are dead! After, put both the bean sprouts and the ground paste in a bowl and mix well, that’s it!

Step 3: Serve and conserve sambal toge

Serve your sambal toge immediately or store in an airtight container in the fridge for safekeeping for a few days. Always check your sambal for spoilage before eating!
