What to consider when choosing the ingredients
Sambal nanas has a distinctive sweet and sour flavor because of the pineapple. You can use fresh, canned, or frozen pineapples for this recipe.
The chillies, garlic, palm sugar, and vinegar provide the spicy heat that balances perfectly with the sweetness of the pineapples. Bird’s eye chilies and large chili peppers are usually used to make it.
If you can’t find them in your local grocery store, you can substitute with any other hot chili pepper.

Step 2: Grind the ingredients
Take the chilies, wash and remove stems. Peel the garlic and add all to a food processor or blender, and grind until smooth. Add the vinegar and palm sugar and grind a bit more.

You can adjust the amount of chilies and sugar according to your desired level of spiciness and sweetness.
Step 3: Frying sambal nanas
Take a frying pan, add some cooking oil and set the heat to medium. Once the oil is hot, add the ground paste and fry lightly for a few minutes.

Then, add the pineapple pieces and fry for a few more minutes while stirring well. Make sure all the ingredients are well mixed and heated through. That’s it!
Step 4: Serve and conserve sambal nanas
Finally, let’s talk about serving and conserving this sambal. It can be served as a side dish with grilled meats or seafood, or as a topping for burgers, hot dogs, and sandwiches. You can also combine it with rice dishes, curries and such, I recommend the following:
