What to consider when choosing the ingredients

The great thing about sambal bali is that it requires minimal effort and very few ingredients. The main component, of course, is chillies. I recommend using a mix of bird’s eye chilies and large red chilies, as they bring different levels of heat and flavor to the mix.

For the spices, use kecap manis and palm sugar to balance the heat and add some sweetness. Use soy sauce and brown sugar if you want to use more commonly available ingredients. Like always, I encourage you to experiment by adding some of your favorite spices!
