Telur Balado Recipe: Amazing Indonesian Fried Eggs

Welcome to another great egg recipe! Great telur balado, boiled and fried eggs (telur) in a spicy sambal-like sauce (balado). A very popular side dish in Indonesian cuisine and adopted worldwide!

To make telur balado, simply hard boil some eggs and fry them in oil after peeling. Grind chillies, tomatoes, garlic and shallots in a food processor to make the balado sauce. Add spices to the balado and fry it. Add the eggs to get the final result!

  • 6 eggs (or less or more)
  • 4 red chillies (or less or more)
  • 1 large tomato
  • 2 cloves of garlic
  • 3 shallots
  • 2 kaffir leaves (lime leaves)

  • 1 tsp terasi powder

What to consider when choosing ingredients

To start of, I highly recommend using a food processor for the balado sauce. If you don’t have one, get the one I use here. I use it for a lot of recipes so definitely invest in a high quality one!

Ingredients

For the ingredients, simply choose the amount of eggs and spiciness you want. This will determine the amount of chillies you will use, the 4 I used without seeds gave a really nice spice level, very manageable to most people I imagine. Leave the seeds or use more chillies to upgrade the spice level.

The tomato, shallots, garlic and kaffir leaves are to counter the spicy chillies and the mentioned amount do so greatly. I really like the fresh taste, color and structure the 4 ingredients give. I also left the shallots from the food processor to keep the structure a bit more intact.

Consider changing these ingredients if you want, use another type of onion, lime juice instead of leaves, different types of tomato, you name it. Try to mix it up and see what happens!

Spices

I used little spices in the recipe as the ingredients already have a great taste, using salt and pepper to boost the flavors and terasi as it is traditionally used in the telur balado. It really gives the authentic terasi flavor which I really appreciate in this dish. Of course, you can use more spices if you like to add more flavor to the balado sauce.

Let’s continue with the steps of making this great dish!

Step 2: Boil the eggs and chop the ingredients

Starting of with boiling the eggs, add the eggs to boiling water with a royal amount of salt. Boil for 12 minutes and put the eggs in cold running water for about 5 minutes. This will make the peeling go easy.

In the meantime wash and chop the chillies, roll the chillies between your fingers to break up the seeds inside the chillies and wash them away after cutting. Quite a lot of seeds should come out so use a drainer to remove the seeds with running water.

Chop the tomato in 4 pieces and peel the garlic, add to the food processor with the chillies. Leave until ready to fry (don’t grind yet). Start chopping the shallots finely, but don’t forget about the eggs. They should be boiled around this point.

Step 3: Fry the eggs and balado sauce

Peel the eggs, add a royal amount of oil to a frying pan and put on medium-high heat. Add the eggs once the oil is hot and let the oil sing gently. Fry the eggs on all sides until crispy all the way around.

When done remove the eggs and part of the oil. Reuse the pan for the balado sauce. Add the finely chopped shallots to the oil leftover and fry for a minute or two. In the meantime grind the insides of the food processor quite finely. Add the content to the frying pan and add the spices and kaffir leaves. Stir well and let simmer until the water has evaporated.

At this point add the eggs and stir well to let it integrate with the balado sauce and you should be done! Very easy recipe that only requires some cooking time. You will not regret making this delicious, easy to make and spicy recipe!
