How to Make Stuffed Spicy Sweet Potatoes

Welcome to another great recipe! This time it’s about stuffed spicy sweet potatoes. Very easy, cheap and relatively healthy!

To make spicy sweet potatoes, simply make a sauce to go in the sweet potatoes while they roast in the oven. After roasting, open the potatoes, pour in the sauce and garnish!

This amazing recipe is very well balanced in taste, convenience and costs and is definitely worth trying out. It’s also vegetarian an possibly vegan if you make some adjustments. You can make it a very healthy dish as well by leaving out the creme fraiche and cheese. Try it out and let me know what you think!

Ingredients
  

  • 4 large weet potatoes
  • 150 gram crispy corn
  • 150 gram kidney beans
  • 200 gram vegan ground beef
  • 1 large onion
  • 3 gloves garlic
  • 1 red pepper
  • 150 gram tomato paste
  • 1 tbsp grated cheese
  • 200 ml creme fraiche

Spices

  • 1/2 tsp salt
  • 1 tsp black pepper
  • 2 tsp Italian herb mix
  • 1/2 tsp chili powder
  • 1/2 tsp chili flakes

What to consider when choosing ingredients

For this recipe, you will have a lot of freedom to play! Just pick some nice looking sweet potatoes and start imagining what would be nice to throw in there. 

Like always, read through the next section if you want to know what choices I made when making this recipe. If you are not interested and just want to duplicate what I’ve shown in the recipe image, skip this part and go to step 2.

Spiciness

The spiciness definitely come from the red chili, the chili powder, and the chili flakes. Find out how to make your own chili powder here. Be sure to experiment by using sriracha sauce, sambal badjak (recipe found here), different type of fresh chillies and powders and consider also what structure the ingredients will bring.

This will definitely define how you make amazing spicy sweet potatoes, all that’s left is to choose the sauce ingredients.

Sauce

Personally, I chose a rich sauce that is very thick such that the spicy sweet potatoes are not dripping sauce everywhere. The rich sauce contains some highly nutritious ingredients like the beans and the corn, along with the vegan ground beef to form a really sturdy sauce!

I like the vegan ground beef as it’s just so convenient and cheap to use and much more healthy then the meat. Of course the sauce cannot be completed without some garlic and onion, just great ingredients is rarely don’t use. It gives the sauce volume and great taste.

Swap out any ingredients you don’t like, use ground beef from an animal if you’d like, use less ingredients to get a more runny sauce, just try something out! 

I’ve decided to go for tomato paste to start the sauce, you can always choose using fresh tomatoes, basic tomato sauce, or any other sauce base you might like.

The grated cheese and the creme fraiche are just to garnish the dish when serving, upgrading the visuals and using both to cool down the spices by adding some to each bite.

Finding a perfect balance when using spicy and fresh flavors really makes or brake a dish so taste often, experiment and adapt to perfect your skill!

I’ve implemented (of course) salt and pepper to boost the flavor, I used only a little amount of salt to consider the healthiness of the dish. Some green herb mix to implement some color into the dish and that’s it!

Basically, the ingredients added already add so much flavor and color that only a little amount of spices are needed. Let’s continue cooking:

Step 2: Cook the sauce and roast the potatoes

Before you do anything, pre-heat your oven to 200C and throw in your potatoes! The potatoes take at least 45 minutes to cook. Only throw in the ones you will eat now, if you are saving some for later you only have to cook the potatoes and you are good to go!

After that, chop the onion and garlic finely, heat a cooking pan with the oil of your choosing on medium-high and throw in both. Cook for a few minutes while cleaning and chopping the red chili, keep or discard the seeds, they contain most of the heat. I’ve kept them in for some extra spice!

Add them to the pan and clear some space to fry the tomato paste directly in the pan, it will improve the taste of the paste significantly if you fry it first.

Now lower the heat to medium and throw in the beans, corn and ground beef and stir. Cook for a minute and add something like 100 ml of water.  Stir and add the spices, the filling is actually already close to being done. 

Have a look at the filling, if you think there too little moist add some more water. When you think it looks good have a taste and see if you want to add more spices. When you are happy with the result, go for a low heat and cover the pan. Let it simmer for some 10 to 20 minutes depending on the time left on the oven.

Step 3: Combine and serve the spicy sweet potatoes

Now that the filling is done, wait for the potatoes to be in the oven for at least 45 minutes. If the potatoes are very thick, leave them for another 10 minutes! When done, slice them open over the length of the potato, they should open like a booklet so don’t cut them all the way through.

Now use some cutlery to mash up the insides of the potato a little bit, try to create a cavity for the filling to settle in.

Add the filling and sprinkle some cheese and chili flakes on top, in an oven save dish put them back in the oven and let the cheese melt for some 5 minutes.

Now you are good to go, serve with a tablespoon of creme fraiche and watch out for the temperature straight after the oven!
