How to Make an Easy Spicy Chicken Pasta

This recipe is probably a little unconventional for most people. It is however also very, very tasty! The flavor introduced in the pasta by the spicy chicken is really amazing, combining Indian and Italian cuisine.

To make spicy chicken pasta, simply marinade chicken in yogurt and spices. Boil the pasta and cook the marinaded chicken! Very easy and really delicious.

Below I will tell you what I used for the recipe and follow up with why to pick certain ingredients and hopefully teach you how to come up with your own version.   • 500 g whole wheat pasta
  • 500 g chicken thighs
  • 300 ml thick yogurt
  • 1 large onion
  • 3 garlic cloves

  • 2 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp chili flakes
  • A few leaves of coriander

What to consider when choosing the ingredients

 The spicy chicken used in the recipe is inspired by the Indian cuisine where yogurt is used to marinate the meat so that it becomes extremely tender! This process takes some time, marinate in advance and add your spices from the start. 

The spices picked is where you can influence the recipe to your licking. Both the salt and pepper are the usual basis when I create a spice mix. I wanted the pasta to be spicy so I added quite some chili powder and flakes.

The curry powder, turmeric, smoked paprika powder are all to implement a great flavor to accommodate the spiciness of the spicy chicken pasta. Pick your favorites to add or exchange if you want!

Other spices I would consider playing around with;  lemon grass, lime leaves, ginger, sugar, cloves or maybe a store bought chicken spice mix. The possibilities are endless! 

Consider adding a sambal to the marinade, a great way to implement spice and flavors! And of course, the chili powder found in the list (highly recommend!) can also be made at home, using your favorite fresh chillies. Find the recipe here.

The garlic and onion are heavily used in my kitchen and certainly cannot be missed here. Great flavor enhancement and bring a little bit of structure as well. Feel free to change or exchange them!

Add your favorite vegetables if you want and think about the structure it brings to your dish! This is the main reason for adding these secondary ingredients, to influence the structure and add a more healthy volume to your dish.

Let’s continue to the spicy chicken pasta instructions:

Step 2: Marinate the chicken

First, start by chopping your chicken in bite size pieces, chop the onion and garlic finely, chop the leaves of coriander once or twice.

Add in a sealable container and add the yogurt and spices. Mix well, leave for at least 15 minutes before eating. Try to give it a stir once or twice when the marinating process is ongoing. Definitely before use, give it a stir!

If you want you can leave overnight for an even better result. If you don’t have the time, definitely leave for 15 minutes.

Step 3: Boil the pasta and cook the sauce

Once the marinating time is sufficient and you want to start cooking, add some salt and olive oil to a pan of water and bring to a boil on high heat.

Alternatively, you can boil the water in a kettle, add to the pan with the salt and olive oil. This will save some time.

Add the pasta when the water is boiling, turn down heat to medium high and let it simmer. Stir regularly! Cook the pasta 1 or 2 minutes less than on the packaging to accomplish an al dente pasta.

In parallel, add olive oil to a cooking pan and set to medium high heat. After a minute, add the marinated chicken, including all the marinade to the pan.

Let it simmer slowly and even lower the heat once everything has reached a high enough temperature. This will stop the temperature from rising and let the chicken cook slowly, saving tenderness!

Cook for some 7 minutes, the chicken should feel more sturdy. Don’t forget to keep stirring the pasta! If you are afraid of under cooking the chicken, simply check the thickest piece you have, cut it in half and check if the inside is cooked.

Once the pasta is cooked, add a tablespoon of the cooking water to the chicken and remove the rest. Add the pasta to the pan of chicken and stir well. Let all of the ingredients and flavors cooperate well and let it cook a bit more.

Step 4: Serve

Turn off the heat when done. Remember to always have a taste and add some more spices if needed! Even if you are not sure you know what you are doing using spices, just start practicing! Taste, adapt the taste and practice a lot! Soon you will really start recognizing the flavors and be a spice using chef!

 A final tip is to always cover such a dish if you need some time preparing the table or something, pasta tends to dry out quite quickly and alters the taste. If you are happy with the result, serve hot, garnish with some leaves of coriander and enjoy this wonderful spicy chicken pasta!
