  • 2 red onion
  • 2 garlic cloves
  • 1 tbsp (sunflower) oil

  • 2 candle nuts
  • 1 tsp terasi powder
  • 1 tsp turmeric powder
  • 2 tsp palm sugar
  • 1/2 tsp white pepper

Step 2: Chop and grind the ingredients

I’ve been experimenting different methods for grinding ingredients for my sambals, using a blender ensures the ground paste will be very well shredded, leaving almost no larger bits in your sambal. Choose any way of grinding the ingredients you like but for this dish, I decided to go for using a blender!

Blend all the ingredients except the grated coconut and salam leaf. The blend should be smooth and fragrant, serving as the flavor base for the sambal.

Step 3: Fry sambal serundeng

Heat oil and fry the ground paste along with the salam leaf for a couple of minutes until the mixture becomes fragrant.

Now, add the grated coconut to the pan. Stir well to ensure the paste coats the coconut evenly. Continue frying for several minutes until the coconut turns golden brown and crispy.
