To make sambal cuka, simply grind some chillies, garlic and shallot. Add vinegar and spices and that’s it! Very easy and quick to make.

What is sambal cuka?

Sambal cuka originated in Indonesia, but it is also commonly used in Malaysia, Singapore, and other Southeast Asian countries.

The sambal is traditionally made by grinding fresh chili peppers, garlic, shallot, sugar, vinegar, and water. The result is a sour, slightly sweet, and spicy condiment that can be used to add flavor to a wide range of dishes.

Sambal cuka is typically served as a side dish or dipping sauce for grilled meats, rice dishes, and noodles. It’s sweet and sour flavors are amazing to try out yourself, this one is one of my absolute favorites! Let’s get started:

  • 2 red chili peppers
  • 3 bird's eye chillies (mixed colors)
  • 1 garlic clove
  • 1 shallot
  • 3 tbsp white vinegar
  • 2 tbsp water
  • 2 tsp palm sugar
  • salt to taste

What to consider when choosing the ingredients

To make the perfect sambal cuka, it’s important to choose the right ingredients. Freshness is key when selecting chili peppers, garlic, and shallots.

Look for chili peppers that are shiny and firm, with no signs of blemishes or soft spots. Also, choose garlic and shallots that are firm and have no signs of mold or soft spots.

Alternatively, if you can’t find fresh ingredients, you can use dried chili peppers and garlic powder as an alternative.

Step 2: Chop and grind the ingredients

Once you have your ingredients, it’s time to chop and grind them. Start by washing and roughly chopping the chili peppers. Remove the stems and discard.

Peel and chop the garlic and shallot roughly. Add all the ingredients to a food processor and grind until smooth. Make sure to scrape the sides to get an even texture.

Once everything is evenly blended, add the remaining white vinegar, palm sugar, salt, and water to the mixture and mix well.
