What to consider when choosing ingredients

To stay within the recipe, at least start off with the fresh chillies and the garlic. A super nice combination and implementation of spiciness. Alternatively, work with chili powder, flakes, oils, sambal or even garlic powder. The use of fresh ingredients do give a high quality dish in my opinion.

Play around with the shrimp, use pre-cooked, fresh, frozen, peeled, unpeeled, kingsize, queensize shrimps, the possibilities are quite endless again. For convenience I went for frozen, uncooked shrimps as I would prefer to control the cooking process.

Shrimps are definitely one of my favorite source or protein for any dish! Also very nice in combination with the spicy garlic noodles.

I’ve added the snow peas and of course garlic and shallot to add some vegetables, structure, a visual effect and volume to the dish. The finely chopped shallot and snow peas add a really nice visual effect and are very nutritious!

The garlic and shallot combination specifically form a great base for the flavor palate, the shallot I used instead of another type of onion to add a bit more of a sweet flavor to the dish.

Of course you can tryout different vegetables, onions, amounts to experiment to build your own recipe. Just take your favorite vegetables and try something out! I imagine tomatoes or paprika go very well with this dish as well.

For the spices, since there’s already garlic, onion and chillies used fresh, you don’t need a lot of spices to add additional flavors. Salt and pepper to boost the initial palate is something I rarely skip. You could skip on the salt to consider health although you will definitely notice it in the flavor!

Smoked paprika powder will add the beautiful red color, especially on the shrimps. There will also be some smokey flavor depending on the amount you use. Optionally you can add sriracha to make it extra spicy! The 2 fresh chillies should already yield a nice level of spiciness.

Here’s where you again have a lot of freedom to experiment, tryout your favorite spices and see what happens! Maybe tryout some green spices, as I can imagine this will also highly boost the visual effect of the dish.

Step 2: Chopping the ingredients

Quickly defrost the shrimps by opening the packaging and adding water to it, occasionally stir or change the water for the quickest result.

In the meantime chop your vegetables, I would recommend chopping the snow peas, shallot and chillies finely so the structure of your dish will be very nice! Also chop the snow peas and chillies at an angle, adding a nice effect.

Step 3: Cook the shrimps and noodles

At this point, add some water to your kettle and bring it to a boil. Place a boiling pan with olive oil and salt and add the water once it’s boiling and put on medium heat. Give it a stir and add your noodles. Let it cook for one minute less than indicated. Stir frequently.

In the meantime, add a cooking pan with some oil to your stove on medium-high heat. After a minute or two add the garlic and shallot and fry lightly. Once these ingredients are a bit glossy, add the shrimps. Give the shrimps a few minutes to fry with the garlic and shallot before adding the chillies and snow peas. Stir well and let everything cook a little bit aggressively.

After a few minutes, add the spices and stir well. Give time for everything to integrate and have a taste, add spices to adapt the palate to your liking. Look at the visual difference (images above and below) when adding spices! At this point you can lower the heat a bit if the cooking is still very much present.

Step 4: Combine and serve

At this point, the noodles should be cooked and ready (try one noodle to check it!). Add some of the boiling water to the shrimps and remove the rest. Add the noodles to the cooking pan with the shrimps and combine well.

Lower the heat of the cooking pan to low and have a taste, add more spices, sauces or oils to complete the palate and give some time to integrate! If you are happy with the result, get ready to serve. If you need some time before serving cover the pan so the noodles don’t go dry.
