How to Make Garlic Turmeric Rice with Spicy Zucchini

Welcome to another wonderful recipe! Garlic turmeric rice with spicy zucchini, 2 wonderful concepts combined in an even beter recipe! Served with some hot chicken to complete the package!

To make garlic turmeric rice, simply fry some raw rice in garlic and turmerice before boiling! Make the spicy zucchini in parallel by stir-frying the zucchini on high heat before adding spices on low heat.

This will be quite time consuming recipe to prepare and cook, definitely one for a nice occasion or if you just feel like going the extra step to make some amazing food. It’s using the garlic turmeric rice which add such a nice visual effect to food.

Ingredients
  

Garlic turmeric rice

  • 300 g basmati rice
  • 3 cloves of garlic
  • 1 tbsp turmeric
  • 1/2 tsp black pepper

Spicy zucchini

  • 2 small zucchinis
  • 1 tbsp sambal
  • 1/2 tbsp ketjap manis

Hot chicken

  • 500 g chicken thighs
  • 1 large onion
  • 4 gloves garlic
  • 300 ml greek yogurt
  • 2 tsp chili powder
  • 2 tsp smoked paprika powder
  • 1/2 tsp turmeric
  • 1 tbsp sambal
  • 1 tsp pepper

Optional garnish

What to consider when choosing ingredients

For this recipe, leave the garlic turmeric rice as it is. It just fits so well here, I definitely recommend perfecting in making this yellow rice. You can experiments with different spices or greens to add to the rice, like cloves, parsley, koriander. Again the possibilities are quite endless.

Spicy zucchini

The spicy zucchini on the other hand does have a lot of freedom to experiment, it’s the way you implement the spicy flavor that really can come from anything like, chili powder, different types of sambal, fresh chillies, spice mixes, chili oils, whatever you can imagine!

Just think of the key factors of flavor, structure and visual effect. Find my homemade chili powder recipe here, and my homemade sambal badjak recipe here. These will both do great in this recipe, for the zucchini as well as for the hot chicken.

I picked small zucchinis, which I have been growing in my own garden (more on this later), since the bigger zucchinis actually only increase in size, not in taste or in nutrients. I harvest my zucchinis quite early to have more concentrated foods!

Hot chicken

Now the hot chicken, definitely one of my favorite meat implementations to recipes. Since we are marinating it in advance the actual cooking and time management of the dish is so easy. To start with, experiment with marinating times to taste the effects, leave overnight if you can. 

Play around with the cuts as well, smaller of bigger pieces to find your perfect size. For the marinating itself, definitely use a yogurt high in fat content. This makes the chicken extremely tender, inspired by indian cuisine. 

The flavor of the chicken come from the large list of spices, this is because the high amount of yogurt dilutes the flavors so you need to battle this with lots of spices.

Like the spicy zucchini, just play around with whatever spices you like most but be sure to add quite some hot ones to counter the freshness of the yogurt! Salt and pepper to boost the flavor and to start the base of the spice list.

The rest is to add a spicy flavor, for coloring, and add smokey flavors. Consider the same alternatives as for the spicy zucchini. Let’s continue with the steps!

Step 2: Marinate the chicken

This step will be super easy and can be done 15 minutes in advance of cooking, saving a lot of time management while cooking! I would recommend trying this out overnight but I can imagine you don’t have the time so 15 minutes will also suffice.

Cut the chicken in bite size pieces, the onion in half rings and chop the garlic finely. With the spices, throw everything in a sealable container and mix well. Seal and leave in the fridge until you use it.

If you plan on only marinating for 15 minutes, leaving it outside the fridge is also fine. Ideally, mix everything occasionally to help the marinating process.

Step 3: Cook the garlic turmeric rice

Once the chicken has been marinated for at least 15 minutes, start cooking the garlic turmeric rice. Simply peel and chop the gloves of garlic finely. In a boiling pot, add some oil to your liking and put on medium heat. Once hot, add the garlic and lightly fry. 

Add the rice after a minute or two and stir well, increase heat if you don’t hear any sizzling. Let the rice fry for a few minutes and stir regularly, you know this process is done when the rice starts to become a little bit transparent. Throw in the turmeric and mix well.

At this point, add enough water such that the rice is covered in water and the water is higher than the rice, about the height of the bone of your fingertip.

Bring this to a boil, close the lid and set the heat to low, you want a very small simmer with the lid closed.

If successful, cook for about 7-8 minutes, all the water should be evaporated and the rice should be perfectly fluffy and cooked. Stir with a fork, keep covered and continue cooking. You want to set this aside for about 10 minutes, again this process can also be done the day before to get the best tasting rice!

Step 4: Cook the spicy zucchini and hot chicken

Start by chopping the zucchinis, I like going for smaller pieces like quarter disks. Add a cooking pan to high heat using only a little bit of your favorite oil. You want to fry the zucchini with high heat as the vegetable is quite chewy. While cooking you are tenderizing its structure.

Once the zucchini is starting to become cooked, lower the heat and give the pan time to cool. Add the spices and quite some more oil. Mix wel, set the heat to low and cover. In parallel, start cooking the chicken.

Add another frying pan with a little oil to medium heat, add the marinated chicken and leave to cook, only stirring occasionally. Let everything sit and slowly cook for the best results, the chicken should be done in about 15 minutes.

If you are unsure about the chicken, open the largest piece and check the inside for rawness. Have a taste of both the spicy zucchini and the hot chicken and see if the taste is good. If not, add some more spices or even yogurt if the spice is too much.

Continue cooking for a minute and stirring well if you are trying to implement additional ingredients. If the taste if ok, turn off the heat and get ready to serve!

Step 5: Combining the goods

Now that all is cooked, get your favorite dish to serve in and try to keep the 3 main components of the recipe a little separated, don’t mix.

Garnish with some fried onions and sambal if people want an extra spice boost. Serve hot and enjoy this wonderful recipe!
